My Seasonal Breakfast Treat; Porridge!

Ok, I admit it, I am completely obsessed with food. I live to eat, rather than eating to live. I spend most of my time thinking up new recipes which are quick, healthy and cheap (I am a student after all!). My friends at University are always about the food they eat -basic, processed and boring.
I want students to realise that they can eat good food on a budget!
I will be posting a new recipe every week for you guys to try, let me know what you think.

Grown up Porridge

For my first recipe I have decided to start with breakfast. Whilst I'm working or going to lectures I never have the time to eat breakfast, let alone a balanced one.
My idea of breakfast is scoffing an Apple Nutri-Grain bar on the walk to work or grabbing a Hazelnut Latte with two brown sugars -Healthy I know!

This week I'm going back to my childhood and am going to cook Porridge every morning. But instead of drenching it in Maple syrup, I'm doing it the grown up way.



40g (5oz) Rolled Oats
190ml (1/4 Pint) Semi-Skimmed Milk
1tsp Brown Sugar
1tsp Cinnamon
Rhubarb Compote


In a Saucepan, bring the Oats, Milk and Cinnamon to the boil.
Turn down to a simmer and cook for around 6 minuets.
Or Alternatively microwave for about 3 minuets on high.

Rhubarb Compote:


100g Rhubarb cut into small pieces
1tsp Sugar
1tsp Orange Juice
1/2 Vanilla Pod (Split)


Pre heat the Oven to gas mark 5 (190'c/Fan 170'c)
Put the Rhubarb in a large, shallow baking dish.
Sprinkle over the Sugar and Orange Juice.
Scrape the seeds out of the Vanilla Pod and add both seeds and pod.
Mix well.
Roast for 15 minuets until soft.

Cinnamon and Rhubarb Compote
Vanilla Pod and Pear
Mixed Berries and Walnuts
Almonds and Honey
Apple and Strawberries
Brown Sugar and Banana
Blueberries and Raspberries
Jam - Your favourite flavour
Chocolate Hazelnut Spread
