I saw this recipe featured on BBC's The Little Paris Kitchen: Cooking with Rachel Khoo and have since made them every weekend.
Ingredients for one:
1 Egg
1-2 Slices of White bread
Butter
Flour
Ham
Mustard
Seasoning
Utensils:
Saucepan
Wooden Spoon / Whisk
Muffin Cups / Small Coffee Cups
Method:
Take the slices of bread and cut off the crusts.
Melt butter and brush on both sides of the bread, then mould around the cup.
Add flour slowly to the remaining melted butter whilst constantly stirring/whisking to created a roux, spoon in mustard and seasoning to taste.
Stuff ham in the bottom of the cup, place an egg on top (some egg white may have to be drained to make room for the rest of the filling) and scoop in the roux.
Top with grated cheese and put in the oven at 180 degrees for 15 mins for an runny egg and 20 mins for an hard egg.
Put under the grill to crisp the cheese topping if needed.
Et Viola, a scrumptious breakfast with minimal washing up.
