During last week's sunny weather I whipped up some dairy free tzatziki.
Using Alpro's Simply Plain alternative to yogurt as a base, I added chopped mint, lemon juice and thinly sliced cucumber (which I allowed to rest on kitchen towel for 15 mins before to absorbe any extra liquid).
I also stirred in a good pinch of Maldon Sea Salt as Alpro Simply Plain is slightly sweet - it contains some sugar to help create the cultures, much like Lactose (dairy sugar) in milk.
Once mixed together I left it to infuse overnight. This step is an important one - you'll notice the mixture is a lot more flavoursome if you leave it for a good few hours.
With prep time, this took around 20 mins to whip up. The ingredients cost me slightly more than you'd expect to pay for a pot of supermarket tzatziki, but it gives you lots of left over store cupboard ingredients to continue experimenting with.
